Bought for use as meat cutter. So I bought these for production in a meat department. This is the first new knife set I have bought, so take my review with a grain of salt. I will review each part of the set separately. I will not mention in each individual description that each knife is razor sharp, they sliced paper easily and also gave a great shave on my arm.Cimeter (Top knife pictured): This knife is useful only for large subprimals because of it’s bulk. Good knives, but “field dressing” is a bit misleading This is a great set of knives, but not something I would call a “field dressing” kit. First off there is no skinning knife. Secondly some of the knives are just too big to use in the field. I butcher elk and beef and as it ends up, I don’t use any of these in the slaughter/skinning process, which is what I view as in the “field”. I would recommend these knives for butchering (cutting and wrapping once the meat has hung) and for kitchen use. Just not for field use. Based on this…
